Cranberry Tart



From The Art and Soul of Cooking
5 Cups fresh Cranberries
3/4 cup of sugar
Finely Grated Zest of 1 medium Orange
4 teaspoons flour
1/4 teaspoon ground cinnamon

Coarsely chop half of the cranberries, an mix all ingredients. Pour in a Pie shell.

Pie without topping.

Topping
1 Cup flour
3/4 cup sugar
1/4 teaspoon salt
1 stick unsalted butter cut into 1/2 inch pieces
Mix above ingredients until the consistency of peas, and then evenly spread on top of the pie.

Bake at 350 degrees F for 40 min.
